Fast pumpkin pancakes are a great breakfast, snack or dinner. In this recipe, the main role is given to the pumpkin, so the pancakes are especially tender with a minimum flour content. Quick pumpkin pancakes can be made sweet, for this we remove onion, salt and basil from the recipe, add sugar and raisins - and now we can make it dessert!

- Pumpkin - 200 gr.
- Carrots - 2 pieces.
- Onions - 1 pcs.
- Egg - 1 pieces.
- Flour - 50 gr.
- Sol - 1 tsp.
- Basil - 1 tsp
- Sunflower oil for frying
Coarsely chop carrots and onions.
Put the sliced pumpkin, carrot and onion into the bowl of the blender. Crush vegetables to a porridge state.
Add egg, flour, salt and basil to minced vegetables. Mix thoroughly
Add vegetable oil to heated pan. After heating the oil, gently spread the pumpkin mass with a spoon and fry over low heat from the 2's sides. Each side of the fritters needs 5-7 minutes.
We got 12 beautiful pumpkin pancakes, they can be served with sour cream, tomato sauce or just to eat;)
