Pumpkin and rice are a win-win combination and a storehouse of vitamins. Even risotto can be cooked with a pumpkin and to diversify the everyday dinner, let's try;)
- Arbor rice - 300 gr.
- Pumpkin - 400 gr.
- Onion - 1 pcs.
- Butter - 30 gr.
- Parmesan - 30 gr.
- Chicken broth - 1 / 1,5 l.
- Garlic - 1 clove
- Thyme - 1 tsp
Onions cut into small cubes, and finely chop the garlic.
On a heated and slightly oiled saucepan, place the onion, fry over medium heat until golden brown.
Diced pumpkin put to the onions and add the butter. Fry 10 minutes.
To the vegetables we send garlic, thyme and salt, mix and simmer 5 minutes.
Arborio rice is washed, dried and placed in a saucepan, pour broth over our dish and cook over medium heat for 30 minutes.
Sprinkle parmesan sprinkled ready risotto with pumpkin and mix.
We spread risotto with pumpkin on the plates and proceed to tasting.
