Everyone knows that barley contains a huge amount of vitamins and trace elements, and do you know that for women it is just a storehouse of youth !? Yes, it is this cereal that helps beautiful women to remain young and beautiful as long as possible because it contains lysine, which produces collagen! Of course, not all of us love barley for its fresh taste, but still there is an excellent alternative to diversify regular cereals, for example, to cook Italian perlotto with mushrooms. Let's try? ;)
Ingredients for portions 2:
- Pearl barley - 120 gr.
- Fresh champignons - 250 gr.
- Onion - 1 pcs.
- Dry white wine - 100 ml.
- Chicken broth - 700 ml.
- Parmesan - 70 gr.
- Salt - 1 tsp
- Provencal herbs - X. NUMX tsp
- Olive oil - 1 st.lch
First of all, we will prepare pearl barley: wash it, pour it with cold water and leave to soak for an hour for 1-2.
Wash, dry and coarsely chop the mushrooms.
Onion chop half rings.
In a heated pan, pour in olive oil and fry the onion until golden brown.
Add mushrooms to the onion and fry well, until all the liquid is evaporated.
Barley turn back in a colander, give all the liquid to drain. After that, add it to the mushrooms with onions in the pan and fry 4 min. stirring constantly.
Add the wine and give it to completely evaporate.
Gradually pour in chicken broth, stirring. The broth should completely cover the grits. Cooking perlotto on low heat for 40-45 min. stirring occasionally. When ready, add salt and season with Provencal herbs (basil, oregano, thyme, etc.).
Finally sprinkle the finished dish with parmesan and mix well.
We spread perlotto on plates, decorate with greens. Enjoy your meal!
