Based on the recipe of Konstantin Ivlev, let's cook with you a super tasty and healthy dish - lentils with zucchini under carrot juice!
The dish turns out to be very nutritious, but if you cook without oil, then this is a vegetarian and lean option.
for 2 servings
- Lentils - 100 gr. (I used Turkish)
- squash - 1 pcs.
- Spinach - 100 gr. (in the original recipe fresh spinach is used, I have frozen)
- Fresh carrot juice - 100 gr.
- Butter - 40 gr.
- Olive oil - 50 gr.
- Garlic - 1 clove
- Fresh thyme (I had dried)
Wash lentils in cold water and cook until ready, Turkish lentils ready in 20 minutes.
Zucchini cut into small cubes, garlic - finely minced.
In olive oil, fry zucchini, garlic and thyme for 3-5 minutes.
Fry lentils together with vegetables 3 minutes.
We put carrot juice into the pan, and evaporate it in about 3-5 minutes.
Now add spinach, butter, salt, you can black pepper. Tomim 5-7 minutes on low heat.
